STRAWBERRY PECAN QUICK BREAD
This quick bread recipe is an absolute delight. With late spring/early summer being the perfect time for strawberries, I highly recommend you try some in this strawberry quick bread.
Ingredients
For 4 large servings you will need:
1 1/2 cups All-purpose flour
2/3 cups Oil
1 cup Sugar
2 Eggs; beaten
1 teaspoon of Cinnamon
1 cup Frozen strawberries
1/2 teaspoon Baking soda
1/2 cup pecans; chopped - I sometimes use a little more as I like to add them as a garnish.

Instructions for making:
Preheat oven to 350F and generously grease the bottom of a 9x5-inch loaf pan. Set this to one side.
Combine the flour, sugar, cinnamon,and baking soda in a large bowl and mix well. In separate bowl, blend oil and eggs. Slice the thawed strawberries and add to this mixture.
Add the mixture containing the strawberries to the bowl of dry ingredients and stir in the pecans, blending until dry ingredients are just moistened. Pour the bread mixture into loaf pan. I like to garnish the top of the mixture with additional chopped pecans at this stage.
Bake the mixture for 60-70 minutes, or until you can insert a knife with the blade coming out clean. Cool for about 15 minutes before removing from pan.
Allow to rest and cool completely before serving.
