The reason I love quick bread recipes so much is that they are one of the easiest to make, they keep well and are good at anytime of the day.
Now I have practised many a recipe but there really is no big secret to making quick bread. There are however a few tips I would like to share with you about how to mix quick bread.
- Always mix your wet and dry ingredients in separate bowls before combining.
- Don't overmix your quick bread. You should only be mixing your wet and dry ingredients until they are just mixed. Anymore than this and you will make it really glutenous.
- Your mix should be slightly lumpy - this is ok!
- Pre-heat your oven. Quick bread recipes do not take long to mix so make sure your oven is ready.
- Be sure to bake the quick breads as soon as you can. Delaying can often cause failure for the breads to rise.
... and that is about all there is to it. Yes, it really is that simple. I always ensure that I have all the ingredients to my quick bread recipe ready, and that the oven is pre heated before I start mixing. Then I make sure I do the mixing with a certain element of speed. I guess thats why they call it quick bread?
